Effortless Winery Wastewater Compliance with VSEP®
The compact, precision‑performance treatment system that turns regulatory pressure into reclaimed land, clean irrigation water, and recovered wine.
California’s new Winery Process Water regulations are reshaping how wineries manage nitrogen, salinity, and BOD in their process streams. As aerobic ponds and digesters consume valuable vineyard land, and struggle to meet modern water‑quality demands, wineries need a smarter, more compact, and more reliable path forward for winery wastewater treatment. VSEP® RO delivers that path.
Using patented vibratory shear technology, VSEP® treats even the toughest winery wastewater and lees‑laden streams, turning what was once waste into clean, reusable irrigation water and recoverable wine fractions. No sprawling ponds. No clogged membranes. No lost acreage.
Aerobic ponds and digesters take acres of valuable vineyard land while still struggling to meet salinity and nitrogen limits. VSEP® delivers a modern alternative: a compact system that consistently meets the state’s highest water‑quality expectations in a fraction of the footprint.
Regulations for Wineries are Evolving
California’s State Water Resources Control Board adopted statewide General Waste Discharge Requirements (WDRs) for Winery Process Water (the “Winery Order,” Order WQ 2021‑0002‑DWQ) to protect groundwater from nitrogen, salinity, and biochemical oxygen demand (BOD). The 2021 Order streamlines enrollment statewide, sets tiered requirements by annual process‑water volume (10,000 to 15,000,000 gallons/year), and standardizes monitoring, reporting, and discharge specifications for ponds, land application areas, and subsurface disposal.
The Compliance Challenge Wineries Face
- Monitoring & Reporting: Routine sampling and reporting of flows and water quality (BOD, TSS, pH, salinity, nitrogen species) to verify performance at ponds, land‑application areas, and subsurface systems.
- Effluent Quality Limits: Meeting tier‑appropriate limits/conditions for land and subsurface discharge—often tighter during harvest when loads spike.
- Infrastructure Upgrades: Many unpermitted facilities must add treatment and implement new monitoring to enroll and comply; industry groups estimate thousands are affected.
Conventional treatment for wineries includes aerobic/activated‑sludge systems, aerated ponds, or land application with pretreatment. These can work, but ponds and aerobic digesters consume valuable acreage and may struggle to reliably hit salinity/nitrogen targets without additional polishing—especially where irrigation reuse is desired.
A More Compact Path: VSEP® RO for Winery Wastewater
VSEP® (Vibratory Shear Enhanced Processing) is a high‑shear membrane platform that pairs perfectly with simple prescreening to treat raw winery wastewater (including high‑BOD, high‑TSS streams). Compared with large aerobic ponds or digester fields, VSEP® delivers industrial‑grade treatment in a dramatically smaller footprint, producing clear permeate meeting discharge limits and suitable for irrigation or for blending into existing reuse programs, while concentrating residuals for efficient handling.
How It Works
- Prescreening: Remove coarse solids (e.g., rotary drum screen or vibratory screen, as needed).
- VSEP® RO: Vibratory shear keeps membranes clean while driving selective removal of dissolved salts and nitrogen species, along with deep BOD reduction.
- Permeate: Clear, low‑BOD, low‑salinity water for vineyard irrigation (aligning with your irrigation management plan and soil salinity targets).
- Concentrate: A much smaller, higher‑strength side stream for targeted management (e.g., off‑haul, composting integration, etc.).
VSEP® Advantages
- Minimal land take vs. aerobic pond/digester fields—free up plantable acres.
- Performance headroom on salinity and nitrogen, two drivers of groundwater risk under the Order.
- Harvest resilience: Handles high loads without needing oversized ponds.
- Modular & scalable: Add modules as production grows or tiers change.
- Monitoring made simpler: Stable permeate quality helps with routine reporting and tier limits.
- Lower OPEX, reduced sludge disposal, no need for pond expansion.
VSEP® delivers predictable, year‑round uniform performance, eliminating the seasonal variability that plagues biological systems.
Why Aerobic Ponds/Digesters Aren’t Always Enough
- Footprint: Large pond volumes and safety setbacks consume acreage that could otherwise be planted. (Local programs track pond operation and reporting; many wineries seek to downsize or avoid new ponds.)
- Salinity & N: Biological systems remove BOD well, but salinity and total dissolved solids typically require membrane or other advanced polishing to reliably meet irrigation/groundwater objectives.
- Seasonality: Harvest surges strain basins; maintaining effluent quality and freeboard during peak can be challenging without significant capital/land.
This is why the industry is moving toward membrane‑based solutions, and why VSEP® has become the preferred option for wineries seeking certainty and compact design.
VSEP® helps close these gaps with a compact, high‑rejection barrier that reduces salts and nitrogen species in addition to BOD, creating a higher‑quality effluent for reuse that safely exceeds discharge requirements.
Where VSEP® helps: It shrinks your treatment footprint, elevates effluent quality for irrigation reuse, and smooths seasonal variability, all while aligning with monitoring and effluent requirements.

Example VSEP® Treatment for a Winery
- Headworks / Prescreening (centrifuge or <100 µm screen, pilot testing to confirm)
- Equalization Tank (flow smoothing)
- VSEP® RO Skid (automated operation with CIP)
- Permeate Storage (ready for irrigation distribution)
- Concentrate Holding (truck off‑haul, co‑treatment, or targeted nutrient management)
(Your exact performance/limits will derive from your tier, soil/groundwater conditions, irrigation management plan, and regional board directives.)
Results That Matter
- Protect brand reputation
- Protect Groundwater: Directly address nitrogen, salinity, and BOD
- Reduce Land Use: Avoid or downsize ponds/aerobic fields to free up plantable acres.
- Create a New Water Source: Produce consistent estate-grade irrigation water that can help during dry years and reduce reliance on wells. (align reuse with your irrigation plan and agronomy.)
- Streamline Compliance: Stable permeate quality can make reporting simpler and help meet tier‑specific effluent requirements.
- Add to sustainability goals with reduced waste and lower water demand

Case Study #1 – Kendall Jackson Winery
In 2009, New Logic commissioned a VSEP RO system to treat barrel wash water so that it could be recycled. The wash water was segregated and not allowed to hit the floor. Wastewater collected was continuously filtered by the VSEP system and then returned to the wash process.

The VSEP system recovers about 90% of the effluent as clean water for reuse. The initial BOD is very high at 59,000 mg/L and is reduced by 98% by the VSEP RO. TDS and Nitrogen are reduced by a similar amount. The client promoted this project as part of their sustainability improvements.

Customer Testimonial:
Jess Jackson, founder and proprietor of Jackson Family Wines, stated: “This is the first time that the wine industry has seen a water filtration system that is so efficient and cost effective, We expect this to have a major beneficial impact on water and energy use not only in the wine industry, but in many industries throughout the state. As a family business, we remain committed to being a leader in responsible stewardship of our natural resources.”
Not only for Wastewater Treatment, VSEP Recovers Wine from Lees
VSEP is also the only system that can economically recover wine trapped in lees
VSEP® (Vibratory Shear Enhanced Processing) is not a traditional membrane system. It uses high‑frequency vibration to prevent fouling and maintain extremely high flux, even when filtering thick, solids‑rich winery streams such as lees, barrel‑rinse residues, or tank bottoms.
This makes VSEP® uniquely capable of recovering valuable wine from materials that normally remain unrecovered or go to waste.
1. VSEP’s Vibratory Shear Mechanism Enables Recovery From Heavy Lees
A VSEP® unit vibrates the membrane in a torsional motion, producing intense shear at the membrane surface. This shear:
- Prevents solids, tartrates, skins, and yeast from sticking to the membrane
- Eliminates the fouling that stops conventional RO or crossflow systems
- Allows filtration of extremely high‑solids winery streams in a single pass
Because lees are thick, sticky, and prone to plugging equipment, traditional filtration cannot extract much recoverable wine. VSEP’s fouling‑resistant design overcomes this limitation, allowing wineries to reclaim product that previously had to be discarded.
2. How VSEP® Recovers the Wine Fraction
Step‑by‑Step Recovery Process
1️⃣ Feed Introduction
After prescreening to <100 µm Lees or lees‑laden rinse water enters the VSEP® system. VSEP® can handle feeds containing yeast, skins, pulp, seeds, tartrates, and organic solids at very high concentrations.
2️⃣ Vibratory Shear Prevents Membrane Clogging
Vibration keeps solids suspended and away from the membrane surface, enabling consistent permeate flow even with thick winery residues.
3️⃣ Separation Into Two Fractions
VSEP splits the feed into:
- Permeate (Recovered Wine):
A clear liquid stream containing recovered wine compounds using a UF membrane.
Up to 75% recovery is achievable under appropriate conditions. - Concentrate (Thickened Lees):
A greatly volume‑reduced solid fraction with concentrated yeast, skins, and organics that can be composted, further processed, or sold for valorization. Volume reduction lowers handling costs
3.Winery Lees Case Study: Wine Recovery in Practice
A documented VSEP case study shows the VSEP® system using an ultrafiltration membrane can recover 75% of the tank bottoms as clarified wine that can be recovered. Typical flux rates of 20 GFD are observed. The recovered wine will typically have turbidity <1 NTU.

VSEP® UF Permeate (Recovered Wine) and Racked Wine Lees Feed
4. Why VSEP® Recovers Wine Better Than Conventional Filtration
Key Advantages
- Handles High Solids: VSEP® can filter feeds that would instantly foul a normal membrane system.
- High recovery: VSEP’s vibratory shear maintains high flux at elevated solids loads.
- Single‑pass operation: Minimizes handling and oxidation compared to multi‑stage clarifiers.
- Recovers more wine per gallon of lees: Conventional racking leaves ~5% of wine locked in lees, but VSEP® can extract this volume.
- Improved sustainability: Reduces waste volume, sewer load, and water demand.
